(TAN): From the iconic Izumi restaurant on the rooftop of Four Seasons Hotel des Bergues Geneva to DIFC’s most glamorous rooftop terrace, Chef Mitsuru Tsukada is set to take Dubai’s foodies on a journey of Japanese flavour.
The chef has crafted a menu featuring a selection of his Izumi signatures at Luna Dubai, atop Four Seasons Hotel Dubai International Financial Centre during November 2– 7. The Nobu-trained chef is renowned for his meticulous technique and unrelenting discretion when practicing his art form. Fans of sophisticated Japanese fare can sample Tsukada’s creations over a four-course lunch or a five-course dinner.

“I am incredibly happy to bring my cuisine to Dubai. In such a diverse city, it feels like an opportunity to present the dishes that we are so proud of at Izumi, not just to one country, but to the world,” said Chef Mitsuru Tsukada, Chef de Cuisine, Izumi and Regional Japanese Chef. “What’s more, I could not pick a better spot to cook at – from one rooftop to the other, like international parkour!”
Some of Tsukada’s dishes to look out for include the Black Cod Misu Zuke, Kagoshima Wagyu with Eggplant Caviar, and Lobster and Foie Gras Kadaïf with Shiso Vinaigrette. Tsukada has procured ingredients for his visit with an aim to achieve full consistency with his Izumi menu.
