(TAN): Four Seasons Resort Hualalai on Hawaii Island will partner with celebrity chef Tyler Florence for a special takeover and residency this festive season, the hotel group said in a news release.
Scheduled for December 18, 2022 – January 4, 2023, Chef Florence will bring his American steakhouse Miller & Lux to the Island of Hawaii for a refined yet comfortable dining experience with the best cuts of beef, seafood and locally-sourced produce showcasing the island’s natural bounty.

Miller & Lux will take over the Resort’s Hualalai Grille overlooking the 18th green of the Hualalai Golf Course. Known for its intimate club-like ambiance, Chef Florence’s menu adds an inventive new dining experience to celebrate the holidays. The menu takes influence from the local culture and will showcase dishes such as Kumamoto Oysters with sweet Maui onion mignonette, nori and lime; Caviar Doughnuts with crème fraiche custard and Kaluga caviar; Grilled Salmon Paillard with Tokyo turnips and shiso bearnaise; alongside the top selections of game including Filet Mignon, New York Strip, Wagyu Tomahawk and a finite daily selection of Kalua Pork. Guests can also expect a number of Miller & Lux signature items including the tableside Caesar Salad for two, Miller & Lux Steak Tartare with tarragon mayonnaise, Miller & Lux Burger and more. The menu is balanced with a curated selection of wines and seasonal cocktails to complement each dish.
“I’m both thrilled and humbled to have the opportunity to step into what is already such a rich and exciting food programme at Four Seasons Hualalai and bring a taste of Miller & Lux to Resort and island guests during festive season,” said Chef Tyler Florence. “What we’re doing in San Francisco has been a career high for me and having the local influence and ingredients available to us in Hawaii will make it that much more exciting.”

In addition to the pop-up, resort guests are invited to participate in intimate, demonstration-style cooking classes with Chef Tyler Florence. Available for two weeks during festive season, guests can learn from Chef Florence in a classroom setting while preparing a delicious, island-inspired lunch. The demonstration cooking classes will be held Monday through Friday from December 19 and December 26, 2022 from 1130 hours to 1300 hours. The cost of participation is USD 300 per person, including lunch.
