(TAN): The restaurant Proof at Four Seasons Resort Scottsdale at Troon North, is offering a special four-course bourbon tasting menu at 1830 hours on August 31.

The menu features a collaboration between Proof Chef Edgar Flores and Executive Pastry Chef Yudith Bustos, offering seasonal dishes paired with bourbon. Guests will sip and savour handcrafted cocktails from Proof bartenders, while learning the nuances of pairing the dishes with the complementary bourbon cocktails.

The complete menu is as follows:

First course

  • Bison bites – duck fat potato pave, mustard bourbon glaze 
  • Beverage: Sweet Potato and Maple Manhattan

Second course

  • Smoked beet salad – bruleed aged goat cheese, seasonal farmers greens, tart raspberry vinaigrette, pistachio brittle
  • Beverage: Pistachio Bourbon Sour

Intermezzo

  • Stone fruit sorbet
  • Beverage: Bourbon neat

Main course

  • Smokey oxtail risotto – king oyster mushrooms, bourbon demi glaze, Hudson Valley foie gras
  • Beverage: Plum Old Fashioned

Dessert

  • Chocolate and citrus cake – layered cake, chocolate mousse, orange compote
  • Beverage: Bourbon and Espresso Martini
